Quinoa Maple Pudding. I recently discovered quinoa flakes at the Grain Train food co-op. They cook in simmering water in only 90 seconds. Add a pinch of sea salt and a spoonful of pure maple syrup and you have a two minute dessert with low glycemic carbohydrates, high quality protein, fiber and minerals. The carb calories are there so I keep the portion small.
